Linguine with pesto and zucchini

Ingredients

  • 1 box Barilla® Linguine
  • 1 jar Barilla® Traditional Basil Pesto
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 garlic clove, chopped
  • 1 medium onion, thinly sliced
  • 4 cups (1 pound) zucchini, sliced and quartered
  • ½ cup Parmigiano-Reggiano cheese, thinly sliced, not grated
  • Salt and black pepper to taste

Method

  1. Bring a large pot of water to a boil
  2. Heat oil in a large skillet over medium heat
  3. Add, onion and sauté for 3-4 minute or until tender
  4. Add garlic and zucchini, sauté for 2 minutes then season with salt and pepper to taste
  5. Cook the pasta according to the directions, reserve ½ cup of the cooking water
  6. Drain the pasta and combine with the zucchini
  7. Add the pesto and ½ cup cooking water and stir to combine
  8. Remove from the heat and garnish with cheese
